Pitayas a.k.a. dragon fruit contain more antioxidants than acai. Studies show that antioxidants may be effective at lowering risk of certain types of cancer. Pitaya is rich in magnesium, high in fiber and a great source of iron. “Thai pitaya bowls make for a great healthy and filling breakfast!”, says Brooks. The “Ain’t It a Pitaya Bowl” is similar to a smoothie bowl, but much silkier and you get to top it with whatever toppings you have on hand!
INGREDIENTS:
1 cup dragon fruit, peeled
1/2 frozen banana
1/3 cup coconut mylk, or whatever mylk you like
1/2 cup frozen blueberries
1/2 tbsp coconut butter (optional for added creaminess)
DIRECTIONS:
Using a food processor or blender, puree all ingredients until silky smooth. Top with whatever toppings your heart desires!
