    Tupelo honey is one of the most prized honey varieties. Its delicate taste and sweetness has even earned it a song name.     Production

    This variety is produced in northwest Florida along the Apalachicola river basin. This is the only place in the world where this variety is produced commercially, as the tupelo gum tree from which the honey is produced thrives in these river swamps. As it goes with all types of honeys, the tupelo variety can also differ in color, flavor and quality, depending on how pure it is. The best honey is made from white tupelo and it has a light amber color with a slight greenish shade, a fruity scent similar to the pear scent, and a rich floral flavor. There are several plants that bloom before the white tupelo such as the black tupelo, willow, the black gum and several wildflowers. These plants produce a lower quality, darker honey, which is very likely to granulate. As such, it is possible for different types of honey to be labeled as Tupelo, but if you want to get the best honey, be prepared to pay more for premium quality.

    Tupelo honey is made mostly out of fructose, which is the healthiest sugar, as it is very easy for the body to absorb. Aside from fructose, tupelo honey also contains numerous minerals, seven types of vitamin B, vitamin C, amino acids, traces of protein, dextrins, and numerous enzymes. It has a glycemic index of 54.1 +/- 8.2 and one tablespoon will contain about 3.5 grams of water, 6.5 grams of glucose, 9 grams of fructose, o.65 grams galactose, 0.2 grams sucrose, 03 grams maltose and a total of 60 calories.

    Due to the fact that this type of honey has a high fructose low glucose ratio, it can even be consumed by certain diabetic patients, as long as they first consult with their physicians. The high fructose percentage also makes it a great choice for a quick energy boost. Like most types of honey, it also has great antibacterial and antioxidant properties. It can be consumed on its own, as a sweetener for different beverages or instead of sugar for baked goods. It is also great for salad dressings or sweat meat sauces.
